maqluba - upside down rice

Maqluba - upside down rice, but mine might probably dont look like the real maqluba though, anyway i still enjoyed it so much ^^

so the ingredients are.

potatoes and eggplant - i peeled the skins and fried them.

next, wash 3 cups of basmati rice, place water over and let it expand. prepare the soup and meat ( I use meat (beef), you can always use chicken).

boil the slices of meat.

spices i used for the soup- clockwise: cinnamon stick, cardamom, clove, star anise, soup spices -wrapped in the white cloth (im not pretty sure what's inside, it came like that but i guess the ingredients could be just the same as the powder one), soup powder and onion.

1. heat some oil and fry the dried spices followed by the onion and soup powder.
2. pour them into the meat stock, make sure there is no more meat left in the stock.
3. add the soup spice (one wrapped in the white cloth) and some salt.
4. done.

now prepare the meat.

these are the meats boiled which the stock used for the soup.

1. spread some all spices and paprika over the meats and mix them. just to marinate them for some time.
2. prepare the spices to fry the meats.

clockwise: cinnamon stick, star anise, cloves, black pepper, cardamom.

1. heat the corn oil ( i didnt find the olive oil)
2, fry the dried spices.
3. add some slices of tomatoes (i forgot to buy the tomato puree)
4. pour the marinated meats
five. add some sugar, salt and tamarind.

when it's ready, it's going to look like this.

so, once you've done preparing all the eggplant, potatoes, rice, meat and soup, what you have to do are these.

1st layer:  pour the potatoes followed by the eggplant, the potatoes should fill the bottom pot, unfortunately my pot is too big and it made all the potatoes and eggplants mix. huhuh

2nd layer: the rice.

3rd layer: the meat

 4th layer: the soup

then let it simmer til cook.
done! :)

so alhamdulillah, it turned out well for me and i like it. and i would like to say thank you so much to kak mushi for introducing me the recipe :)

and i have it with chicken kurma and salata hara.

chicken kurma

clockwise: slices of ginger, chilli paste, cloves, cardamom, star anise, cinnamon stick, kurma spice with onion

ingredients needed
one whole chicken
3 table spoon oil
spices as mentioned above
1 tea spoon tamarind paste
pinch of salt
pinch of sugar
200ml coconut milk  (can always be substituted with milk)
water (depends how thick you like the gravy is.
potatoes (optional)
tomatoes (optional)
some yoghurt (optional)

how to?
1. heat the oil
2. fry the spices. start with all the four dried spices and ginger
3. add the chilli paste and continue stirring.
4. add the kurma spices and onion. stir.
five. pour the chicken and let them mix with the spices.
6. add some water and let them boil.
7. when the chicken is almost ready (cooked), pour the coconut milk, tamarind, salt and sugar. stir. and ready to serve.

i normally have it with rice or bread.

salata hara

salata hara is a kind of sauce which is originated from Arab. but this is my version as i havent got a chance to google the right recipe for it.

so the ingredients are

4 tomatoes
6 table spoon lemon juice (i substituted with lime)
1-2 table spoon soup powder - coriander powder
1/2 table spoon all spice
1/2 table spoon paprika
pinch of salt
pinch of sugar

how to?
blend them and ready to serve with rice. i had it with Maqluba rice.

introduction

salam.

o man, i've never thought to create another blog, unfortunately, i think i really need another one. so this blog serves as a place where im gonna jot down every recipe i cook - so i will have a reference in future. i did have many recipe books, in fact i simply jotted down the recipes on any piece of paper i found, so that's so not practical - i tend (like always) lost them. huh..

i couldnt promise this is going to be an awesome recipes to share but could be something i love to eat and make me feel happy when preparing them. insyAllah.

ehem, by the way i wished to name this blog as smell good - taste good, hehe, but  i guess that would sound so much flattering and promising :p then i changed it to this one - eat.munch.chew, more verbs to indicate eating sounds awesome i think :p

i stop here, i might update this blog once in a while as im busy with my 'career', i normally cook when i feel so tensed.

have  a good day!

i shall update soon insyAllah! :)
