baked macaroni

baked macaroni

last Syawal 8th, my parents held an open house to celebrate eid with family and friends around my hometown since we were away to celebrate eid dad's kampung for a week. basically we ordered most of the food and i prepared baked macaroni.

it's simple as ABC and since some friends asked for the recipe and many guests gave compliment for the taste (i think the credit goes to the prego and kimball, hahaha), i guess it's worth sharing the recipe.

show u the macaroni first, hahah


ok, what you need are:
INGREDIENTS A
-garlic
-onion
-chilly paste (optional, if you dont like it hot, then no)
-mince (chicken or beef - i think it's better to grind the meat your own than buying the processed one-it includes fat)
-kimball sauce (down there is the picture, i couldnt move it up, it ruins other pictures)

INGREDIENTS B
- the pasta ( i used one packet)
- 4 eggs (depends on its size)

INGREDIENTS C, D
-prego white sauce (prego herbs and cheese)
-salami (chicken ham) - optional

what to do?
-fry INGREDIENTS A, dont make it too dry, not to watery. just like how you prepare the spaghetti sauce
- boil the pasta and rinse well and mix it with eggs

so what you are going to do next are these - layer your pasta and paste and some other stuff.

layer 1: the mixture of pasta and the egg 

 layer 2: the paste


layer 3: the prego white sauce (check the picture below)

 layer 3: salami (optional, you can always use sausage or dont use anything at all, lol, hahah)

so repeat ervy layer until it's full enough for a tray, for the top. i normally finish it with white sauce so it looks cheesier, but if you like it really cheesy, use mozzarella cheese :)

chocolate sponge cake

i baked chocolate sponge cake layered with creme cheese and topped with melted chocolate.

to prepare chocolate sponge cake, you need

ingredient A (beat until light and fluffy - use mixture)
6 eggs (medium)
1 cup sugar

ingredient B (Stiff these two and fold it into ingredient A with a spatula, dont use mixture)
1 cup plain flour 
1/2 cup cocoa powder 

divide the cake into two or three tins, depends on how many layers you like to have for your cake. bake at 170 degree C for 15 minutes. make sure you heat the oven and grease the tins beforehand. let it cool before taking it out from the tin.

creme cheese. (creme this well)
200g creme cheese
4-5 tablespoon honey
2 tablespoon lemon juice

chocolate topping - melt these
chocolate button/bar (depends on how much you need)
milk / butter.


fold the flour into the egg/sugar mixture



 when the cake is ready, layer with creme cheese


ready to eat.. i should have more cheese...

chicken rendang

for the eid adha celebration, i prepared some chicken rendang for my family. i wish to prepare maqlouba rice, but mom had prepared rice, so chicken rendang is good enough to complete the main course. so this rendang we had with instant lemang (sticky rice cooked with coconut milk, sugar, salt in a bamboo stick).


so what do we need for rendang?


one whole or 3/4 chicken
ingredients A (blended)
Shallot
onion
lemon grass  
chilies
garlic
ginger
turmeric


ingredients B
oil 
chili paste/ powder
250 ml coconut milk (can always be substituted with milk)


ingredients C
pinch of salt
pinch of sugar
tamarind paste
palm sugar
fresh turmeric leaves (slices)


how to?


1-  heat the oil and fry the chili paste
2- pour all the Ingredient A
3- add chicken, coconut milk, 
4- add ingredients C except the fresh turmeric leaves (this one is to be added later when it's almost ready)
5- let it boil and cook it until it became thick, less gravy and stir it once in a while.
6- serve when it's ready.

so it's ready, but the picture is not so clear, huuu but it tastes good for me, at least ;)

chicken rice

when i heard chicken rice, things which came to my head was - it was rice for chicken ^^. ok not funny. so last few days i prepared chicken rice for dinner, something easy and simple to prepare i suppose. so what do we need are.


Ingredient A (rice)
2 cups of rice.
onion chopped
oil
4 inch ginger 
pinch of salt
panda leaves (optional)


ingredient B - blended the ingredient and marinate the chicken (roasted chicken)
1 whole or 3/4 chicken (chopped into 4-6 parts)
4-5 inch ginger
5-6 pieces garlic
soy sauce
2 table spoon honey
pinch of salt
pinch of sugar
1-2 tablespoon oyster sauce


ingredient C (soup)
onion finely chopped
3-4 inch ginger
some pieces of chicken/ chicken bone


ingredient D. (blended for its sauce)
5 chilies
2 tomatoes
pinch of salt and sugar
3-4 tablespoon lemon juice


how to?
1- steam the whole chicken 
2- use the water of steamed chicken (chicken stock) for soup and rice (divide into two parts)
3- marinate the chicken with ingredient B
4- boil ingredient C and add one part of the chicken stock prepared.
5- prepare the rice,heat the oil, fry the onion, add rice, chicken stock and all ingredient A, add water if necessary.
6- roast the chicken or you may fry if you like. (150 degree C for about 30-40min)


serve when it's ready.


it should be served with tomatoes and salad, but im so lazy to check out the veggie case in the fridge ^^,

baked macaroni

so i prepared some baked macaroni and spaghetti bolognese for me and my friend, we went out somewhere then i decided to cook our favourite meal, ok im happy to have anything, but to feed my friend, is slightly different, i still am learning about the favourite. so here i'll share the baked macaroni recipe i learnt from someone's entry. i think her recipe is far easier than the one that i did most of the time. it required less time and energy.


so here it is.
ingredients A
200g macaroni pasta - boiled and fish them out when ready
300g fresh prawn (i dont use this, i forgot)
10 crab sticks (sliced)
10 sausages (sliced)
1 chilli - sliced
100 g cheddar cheese
mixed veggie (i added this because i wanted it to look colourful :P)


ingredients B
five eggs (medium size)
200 ml fresh milk
2 table spoon melted butter
2 teaspoon flour 
2 teaspoon salt ( a pinch of salt)
1 teaspoon all spice 
1-2 teaspoon paprika
1-2 teaspoon black papper


how to?
1- beat the ingredients B very well
2 - mix the ingredients A in a large bowl
3- pour B into A
4- spoon them into the greased muffin trays 
five - bake them for 16-20 minutes in 160 degree C
6 - when ready, have it with tomato ketchup, mayonnaise or anything you like.

crunchy corn flakes peanut butter chocolate bar

all right, i've tried some recipes these few days, but i forgot to snap some pictures for the record, or if i did, i think i forgot how i actually baked or cook them. and even worse when i think my cooking was great then i forgot i have this blog (too much self-flattering :p) so now before i forgot things again, im going to share another recipe.


crunchy corn flakes peanut butter chocolate  bar.


what i did was...



 melt 4 table spoon honey, 2-3 table spoon butter and pour 160g corn flakes. mix them well and pour the mixture into a tray. i used baking paper and  greased it before putting on the tray, then bake the mixture for about 20 minutes or less in 160 degree C. prepare the next layer while it bake and once it's ready, cool it down.


 for the next layer, i had 1 cup peanut butter, 20g chocolate button, and 4 spoon butter. i guess i need to reduce the butter as it's not thick ask i wish it was. pour the butter mixture onto the cornflakes.


then for the next layer, it should be chocolate layer without peanut butter. since i wasnt  happy with the second layer, then i still added some butter for this layer, decreased the butter and i added more chocolate. so i used 1-1 1/2 spoon butter, 30g chocolate buttons, 4-6 spoon peanut butter. so yeah, it's thicker than the second layer ^^

then i let it cool in the fridge for about 20minutes, and slice them into squares. make sure you slice them earlier, or else, you gonna have a real big crunch bar. hehe

so here it is, i will try peanuts next time instead of corn flakes :)

cream puff

fill with custard filling, yummy ^^

ingredients
420 ml water
3/4 cup butter
salt
4 tsp baking powder
2 cup flour
4 eggs


How to?
place butter and water in a pot and heat it 'til boiling.
add flour+baking powder and stir the mixture until it forms a dough.
once the dough is ready, cool it down and prepare the filling.
once the dough is cool, beat in the egg one at a time.
then it's ready to be piped.
bake it at 130 DegreeC for 20-30 minutes.
make sure you do not open the oven until it's really ready.
how to know if it's ready or not? when it no longer oily or watery.


filling
four hundred and fifty ml water *my number five key doesnt work :(
3/4 cup sugar
1/2 cup custard flour
1/2 cup butter


how to?
place water, sugar and custard powder in a large pot and stir the mixture.
turn on the stove and stir the mixture until it becomes tick.
turn off the stove and add butter.
